Creamy chia pudding meets cacao and coconut yogurt in this healthy vegan chia pudding parfait, topped with cinnamon and cacao nibs. It’s easy to make chia seed pudding and you can layer it with your favourite fruits and nuts for a vegan, dairy-free, paleo and all around healthy breakfast.
1/4 cup chia seeds
2 tablespoons good honey or maple syrup
1/2 teaspoon ground cinnamon plus more for dusting
1 cup coconut milk
2 teaspoons cacao powder
1 cup vanilla coconut yogurt or other vanilla yogurt of choice
1 tablespoon cacao nibs
Add chia seeds, maple syrup or honey, cinnamon and coconut milk to a container and stir well to combine. Cover and refrigerate for at least one hour up to preferably overnight.
In a separate container, mix together cacao powder and yogurt.
Spoon yogurt and chia pudding into jars, alternating layers. Top with cinnamon and cacao nibs.
